Madison residents Steve and Lisa Beagles are owners of the new Doe’s Eat Place coming to County Line Road in the Promenade Shopping Center.
“We have just been overwhelmed with the response we have received from the community.
We have been welcomed into the Doe’s family and can’t wait to introduce the community to our family in Ridgeland,” Beagles said.
This will be the ninth franchise location bearing the 76-year-old Greenville restaurant’s name.
The restaurant was established in 1941 in Greenville by Dominick “Doe” Signa and the Signa family continues the legacy to this day.
The Beagles hope to hire about 15 employees and are prepared to serve between 95 and 100 customers per seating.
The menu will feature classic Doe’s fare, including steaks, shrimp and Delta tamales, but Beagles said they will be adding a few items. “We will be doing the best we can to duplicate the original, but we have worked closely with the Signas to introduce maybe three or four items that make sense for our demographic.” The restaurant will only serve dinner, but they are working on accommodating on-site catering for business lunches and daytime events.
They will have “monitor grade” televisions available for presentations.
The floor plan includes a full kitchen, a dining room, private dining rooms, a small bar area and an outdoor patio.
Beagles said she and her husband moved to Madison about nine years ago.
The couple said they found the perfect place to raise their two young daughters, Sarah-Beth, 12, and Rachel-Ann, 9, who attend Madison Middle and Madison Avenue.
The family are members at Parkway Hills United Methodist.
The retired couple got in touch with the brand through the City of Ridgeland Community Development office.
They said they originally were looking for an “orphaned business,” an established small business name that the owners were looking to step away from, but starting Doe’s Eat Place in the area was a hard proposition to pass up.
“We really love working with the Signas and respect the way they run their business and treat their franchise owners,” Lisa said.
Doe’s Eat Place in Ridgeland does not have a hard opening date, but the Beagles said they are looking to open within the next two weeks.
